On those cold rainy days, around 12 noon once the babe is down for her nap, I begin the internal battle over popping the heating back on. With a hint of chilli and scolding hot broth this soup is my rainy day remedy.
Rainy Day Noodle Soup (serves 2)
2 cloves of garlic (finely chopped)
2cm chunk of fresh ginger (grated/minced)
a lug of oil
a pinch of dried chilli flakes
1 litre of chicken stock (made with only 1 stock cube)
a dash of soy
2 nests of your favourite noodles, I like vermicelli
1 large grated carrot (or whatever veg you fancy)
Heat a lug of oil in a large pan and add the garlic, ginger and chilli. Fry until the garlic is just about turning golden. Add the stock, carrot and a dash of soy to taste. Bring to the boil and add the noodles, simmer until soft and grab a bowl.
It’s just that easy and quick enough to be made in the morning and popped in a thermos to take to work. May it warm the cockles of your heart, at least until the heating clicks back on!
